One of the most common radicchio types, Treviso radicchio form dense pointed heads. The white sweet mid rib is contrasted by the bitterness of the red leaves. Treviso radicchio are more commonly sauteed, grilled, and roasted but can also be shredded and eaten raw in salads if you don’t mind the bitterness.

Note: To mellow out some of the bitterness, soak shredded leaves in ice water for about an hour then add raw to salads.
